Bonjour, I’m Antoine

My culinary journey began in the Loire Valley, at my parents' hotel restaurant. My earliest memories are of playing sous chef to my Dad and hiding under the tables of the restaurant during service. Listening and learning and all the while becoming captivated with the art of cooking. Food and hospitality have been ingrained in me from the beginning, it’s what I’ve always known and loved.   

Since then, I've honed my skills in various culinary settings in France, from local farm to table bistros to Michelin-starred establishments in Paris. A pivotal point in my journey was moving to Los Angeles in 2018 to open a French bistro with my friend Sarah Bessade, where we brought a slice of authentic French culinary tradition to the bustling city. 

My experience extends beyond the kitchen, always striving to deliver the best possible experience for my customers. Embodying a genuine passion for food and a commitment to service, what we call in France “L’art de la table”, which is a holistic approach to hospitality and the dining experience as a whole. 

For me, there’s immense pleasure in the act of working with fresh, locally sourced ingredients. Cooking them simply to allow their natural flavors to shine. I firmly believe that when you start with the best-quality ingredients, there’s no need to overcomplicate things in the kitchen.
